I use the Canon EOS D1x , every time I import files from the camera off the card to Aperture 3.4.5 the General Info fields are all blank, camera model etc etc , the metadata is all there as I check in Adobe Bridge and see it there, nothing I do in the import to a new project window helps. Any Idea why this happens or is there a fix

It could be that a metadata preset is being applied during import that is clearing all the fields. Check your import settings, specifically the Metadata Presets section, to see what is being applied during import.
